My Favorite Chocolate Cake That Happens To Be Vegan

I’ve been making this chocolate cake for years and years, first discovering it when I was vegan in college. And I still make it today because it’s that good!

It takes less than 10 minutes to mix-up the batter, and if you bake it in muffin tins, it only takes 20 minutes to bake, which means you have dessert ready in less than 45 minutes. Sold.

The Easiest Chocolate Cake

This is the cake you make when you when chocolate cake and you want it now. There's no butter to cream, no egg whites to beat, nope, you just dump everything together and bake.

Ingredients
  

  • C. all-purpose flour
  • C. cocoa powder
  • 1 tsp. baking soda
  • 1/2 tsp. Kosher salt 
  • 1 C. granulated sugar
  • 1/2 C. vegetable oil
  • 1 C. cold coffee or water
  • 2 tsp. vanilla extract
  • 2 tbsp. vinegar
  • 1 C. chocolate chips

Instructions
 

  • Preheat oven to 375˚F/ 190˚C.
  • In a large bowl, sift together dry ingredients.
  • Separately mix wet ingredients EXCEPT vinegar. Add liquid to dry stir until smooth.
  • Add vinegar and chocolate chips and mix to combine. Do not over mix, there will be streaks of vinegar.
  • Spray a 9" round baking pan with cooking spray or line muffin tins with paper liners. Pour in the batter into the prepared pan. Bake for 25-30 minutes or until a skewer comes out clean. Muffins will take ~20 minutes.

Notes

  • Makes 1, 9″ cake or 18 cupcakes.
  • Unless it’s a special occasion, I usually skip frosting this cake because the chocolate chips add just the right amount of extra sweetness.

  1. If I needed it gluten free, could I just use Bob’s Red Mill One to One gluten free? I am worried about the texture

  2. Do you think it will be possible to double this recipe and bacon in 3 separate 6″ cake pans. The recipe look so moist and delicious that I would really like to make it as a layer cake of very tall one for my kiddo

    Hello again!
    I tried the recipe with oats to get a “gluten free version”
    (Oats contain a kind of gluten but it’s very different from the wheat &al one and doesn’t trigger digestive issues).
    IT WORKS!
    I crushed whole flakes as I didn’t have any oatmeal or flour. The batter was a little looser so I let it sit for few minutes before adding the vinegar.
    I would recommend to bake them a little longer too 3-5 more minutes.
    And lastly I have to admit that I twicked the whole recipe straight from the beggining and it is WONDERFUL and vastly validated with:
    half the sugar (1/2 cup), 1/3 cup oil & 2/3 cup choc chips. 😋
    Give it a go anyhow!

    I made it today it was so good! I’ll reduce the sugar next time but this is my chocolate cake for now on!
    I’m happy to have a nice dessert I can have with my vegan friends and family members that have egg allergies.

    I’m currently in an area lacking the usual vegan ingredients, so finding a cake recipe that doesn’t need any fancy vegan products is sure great! A straightforward recipe to follow, and the cake itself was great. It’s good by itself; even my non-vegan family said it was good! Even better with a chocolate ganache.
