
I love testing viral recipes to see if they can stand up to the hype. I really wasn’t sure about this Grillo’s pickle dip, not being a huge pickle fan myself. But I was wrong. I was so wrong.
The reason being the pickles themselves. They’re not your average pickle.
What makes Grillo’s pickles different from those other ones who shan’t be named is that they are cold packed, not heat processed, making them crunchy and crisp, as opposed to noodly and soft like those others.
The dip itself is super simple to make — you just need the pickles (must be Grillo’s!), a few different types of dairy (for the creamy richness), bacon bits, and spicy jalapeños — creating a tangy, punchy mouth extravaganza.
You’re going to want to put this on the list for your next get-together or Super Bowl party. Trust me. ✨

Grillo’s Viral Pcikle Dip
Ingredients
- 1 jar Grillo's pickles 32 oz (hot or original)
- 1 cup cream cheese softened
- 1 cup sour cream
- 1 cup Greek yogurt plain
- 1 packet ranch seasoning mix
- 1 cup sharp cheddar cheese shredded
- 1 cup bacon bits store-bought or cooked bacon
- 1 jalapeño whole, finely chopped
- 1/3 cup green onions choipped
- reserved pickle brine as needed
- hot sauce to taste
Instructions
Prepare the Pickles:
- Drain the entire jar of Grillo's pickles and reserve the brine.
- Chop the pickles into small, quarter-inch cubes to ensure manageable dipping.
Chop the Veggies:
- Finely chop the jalapeño, adjusting size based on your heat preference.
- Chop the green onions, using about 1/3 cup or approximately four scallions.
Mix the Dairy Ingredients:
- In a large mixing bowl, combine the softened cream cheese, sour cream, and Greek yogurt.
- Gradually add the ranch seasoning mix and a tablespoon of the reserved pickle brine. Mix until well combined and smooth.
Combine the Mixture:
- Fold in the chopped pickles, jalapeño, green onions, bacon bits, and shredded cheddar cheese. If the mixture is too thick, add more pickle brine until you reach your desired consistency.
- If using hot sauce, add a few dashes for an extra kick.
Transfer and Serve:
- Carefully spoon the dip back into the reserved Grillo's pickle jar or a serving bowl.
- Garnish with additional green onions or cheese if desired.
