Bring a saucepan of water to the boil. Add your noodles and cook for 2-3 minutes or until the noodles are almost completely cooked. Drain the noodles and reserve a ¼ cup of the noodle water.
While the noodles are cooking prepare the sauce.
In a medium skillet on medium heat melt the butter. Add the garlic and cook for ~30 seconds.
Add the soy sauce and reduce the heat. Add 1-2 tbsp. of the noodle cooking water to prevent the garlic and soy sauce from burning.
Add the brown sugar and chili flakes. Stir well to melt the sugar. Add a couple more tablespoons of noodle water to keep the sauce saucy.
Add the noodles to the sauce and stir to coat.
Add the egg. Work the egg into the sauce and noodles. Add more noodle water if needed to loosen things up.
Serve in a bowl and top with green onion and bagel seasoning.
