Biscuits and Chocolate Gravy

Hot homemade biscuits smothered in a warm rich chocolate gravy.

Ingredients
 
 

Biscuits

  • 2 C. flour sifted
  • 4 tsp. baking powder
  • 1 tbsp. granulated sugar
  • 3/4 tsp. Kosher salt 
  • 1/4 C. shortening or lard
  • 3/4 C. milk whole

Chocolate Gravy

  • 1 C. granulated sugar
  • 1/3 C. cocoa powder dutch-processed
  • 2 tbsp. all-purpose flour
  • 1/2 tsp. Kosher salt 
  • 1 ½ C. milk whole
  • 3 tbsp. butter
  • 1 tsp. vanilla

Instructions
 

Biscuits

  • Preheat oven to 450˚F(232˚C).
  • Into a large bowl sift together the flour, baking powder, sugar, and salt.
  • Using a couple of butter knives or a pastry blender to cut the shortening into the dry ingredients until sandy and pea-sized.
  • Slowly add the milk and form into a dough.
  • Turn the dough out on to the countertop and gently roll to 1/2" thick.
  • Use a round biscuit and push it straight into the dough. Do not twist.
  • Place the pucks of dough into a greased cast iron pan.
  • Bake for 10-12 minutes. Serve warm with butter.

Chocolate Gravy

  • Into a medium saucepan add the sugar, cocoa powder, flour, salt, and milk.
  • Use a whisk to combine.
  • On medium heat bring the mixture to a simmer and cook until the gravy thickens.
  • Remove from heat and add the vanilla and butter. Whisk to combine.
  • Pour over hot split biscuits.
