This bread recipe uses a surprising boiling technique and yields golden brown loaves.

Ingredients
 
 

  • 400 ml. milk lukewarm
  • 10 g. dry-active yeast
  • 20 g. granulated sugar
  • 8 g. Kosher salt 
  • 600 g. all-purpose flour
  • 30 ml. vegetable oil

Instructions
 

  • In a large bowl, combine the milk, yeast, sugar, and salt. Whisk to dissolve.
    Mixing wet ingredients in a bowl.
  • Add the flour and knead to form a dough.
  • Add the oil and continue kneading until combined and the dough is smooth and supple.
  • Place the dough into a bowl and cover. Place in a warm spot and allow to proof for 45 minutes or until the dough doubles in size.
  • Flatten the dough to remove the gas and roll into a log. Divide the dough into 6 equal pieces.

  • Use a rolling pin to flatten a portion of dough until it measures approximately 4"x8".

  • Roll lengthwise into a cylinder and pinch seams to seal.

  • In a large wide saucepan bring 3" of water to a boil. Add 1 tsp. of salt.
  • Add 2-3 shaped doughs to the boiling water and boil for 2 minutes.

  • Transfer to a parchment lined baking sheet. Use a razor blade to score diagonal slashes into the tops of the dough.

  • Bake in a preheated 200˚C/392˚F oven for 20 minutes.
