Boiled Bread?
This bread recipe uses a surprising boiling technique and yields golden brown loaves.

- 400 ml. milk lukewarm
- 10 g. dry-active yeast
- 20 g. granulated sugar
- 8 g. Kosher salt
- 600 g. all-purpose flour
- 30 ml. vegetable oil
In a large bowl, combine the milk, yeast, sugar, and salt. Whisk to dissolve.
Add the flour and knead to form a dough.
Add the oil and continue kneading until combined and the dough is smooth and supple.
Place the dough into a bowl and cover. Place in a warm spot and allow to proof for 45 minutes or until the dough doubles in size.
Flatten the dough to remove the gas and roll into a log. Divide the dough into 6 equal pieces.
Use a rolling pin to flatten a portion of dough until it measures approximately 4"x8".
Roll lengthwise into a cylinder and pinch seams to seal.
In a large wide saucepan bring 3" of water to a boil. Add 1 tsp. of salt.
Add 2-3 shaped doughs to the boiling water and boil for 2 minutes.
Transfer to a parchment lined baking sheet. Use a razor blade to score diagonal slashes into the tops of the dough.
Bake in a preheated 200˚C/392˚F oven for 20 minutes.
