Equipment

Ingredients
 
 

  • 3 egg whites
  • 30 g sugar
  • 10 g corn starch
  • 1 drop of food coloring optional

Instructions
 

  • Preheat oven to 350˚F
  • In a mixing bowl add 10 grams of corn starch and 30 grams of sugar.
  • Separate the egg whites.
  • Using a hand mixer beat the egg whites until frothy. You can also use a hand whisk for this step.
  • Slowly incorporate sugar, followed by the corn starch. It should start getting frothy and bubbly.
  • Beat until it forms stiff peaks.
  • To make it blue add one drop of blue food coloring. I used McCormick's Neon Blue.
  • Line a baking tray with parchment paper.
  • Mound the meringue onto the parchment paper and lightly flatten the top.
  • Bake for 25 minutes.
