Transparent Lemon Meringue Pie

The clear Lemon Meringue Pie resurfaced recently in a tweet by Helen Rosner showcasing Chef James Dempsey's Lemon Meringue Pie 2.0
Ingredients

Pie Dough


350g All-purpose flour

2 T powdered sugar

1/2 t salt

130 g chilled butter cut into small cubes

1 medium egg

120 ml ice water


Egg Wash

1 egg


Pie

600 ml water

350 g castor sugar

24 g powdered, unflavored gelatin

1 T citric acid

1 t lemon extract


Meringue

230 g castor sugar

100 ml water

4 egg whites

1/2 t fresh lemon juice
